Place the turkey directly on the grate breast side up, or if you want to keep the smoker a little cleaner, you can leave the turkey on the baking sheet. If you are using a smoker that has multiple levels, you can place the bird on a rack to make it easy to transport it to the smoker and then back into the house once it’s finished. We recommend you place a pan on a lower rack to catch the syrup and turkey juices, as they will burn once they hit the diverter plate.

Injection Sauce Directions: Take one cube of butter and melt it in a sauce pan on medium heat, careful not to over heat the butter and burn it. Smash 4 large cloves of garlic and add them to the melted butter and let the garlic infuse into the butter for at least 5 minutes, the longer the better. You can also add seasonings to the butter such as the dry rub you are using on the outside of the tri-tip. Once the butter is infused with the garlic, either strain or remove the garlic from the butter. The butter is now ready to be injected into the tri-tip. You will want to let the butter cool a bit but not too much or the butter will thicken and you won’t be able to inject it into the meat. This is a relatively simple injection sauce. Be creative and add your own seasonings.

Peach Cobbler Cooking Instructions: Preheat grill to 350 degrees F. Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat. Put the butter in a cast-iron pan or a 3-quart heavy-duty or metal baking dish and place on grill to melt. Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping.
